How long will a home-made sponge cake covered in roll-out icing last?
I want to make a cake for my son's second birthday but it looks a bit complicated and I'm also making some more bits for the party. How many days in advance could I make the cake if it was a regular victoria sponge covered completely in the roll-out icing?

The sponge will last about 4 days to still be at its best.Keep itin a tin, not an airtight plastic tub, or it will sweat through the icing.
